For success in this field, several things are essential, Dr. Kornacki advises. “One must learn the basics about the way microbes grow, die, survive, and are found in the environment and in foods,” he emphasizes. “A good mentor is also critical. Working in a commercial food testing lab may provide experiences an aspiring food safety detective will not get otherwise.”
