Kiecker notes there shouldn’t be any worry, as the new regulations would require the approximate 600 plants that slaughter pork in the U.S. to have within their hazard systems, written procedures that demonstrate how they prevent contamination throughout their slaughter and dressing operation.
“They will also have to sample prior to evisceration and then post-chill to demonstrate that they have process control,” he said. “There’s also a requirement in there to do some type of sampling to show their equipment is clean prior to start of slaughter.”
And there will still be 100 percent carcass-by-carcass inspection.
There will be a 60-day period for comment once the rule is published in the Federal Register. Once the comment period closes, the FSIS will review the comments and a final rule will be written. To view the proposed rule and information on how to comment on the rule, visit the FSIS website.
